TRADITIONS...breakfast goodies!


TRADITIONS...Breakfast food for all your holiday gatherings!

These first two are great for Christmas morning because you can make them the night before and just preheat the oven & bake while you are opening presents! Throw a New Years Day pajama brunch...we did this last year and it was so fun! 


Aunt Vals Monkey Bread
Ingredients:
  • 1/2 cup chopped nuts (I like pecans- but you can do a mixture)
  • 18 frozen dinner rolls (usually come in a big bag in the garlic bread freezer section)
  • 3 t. cinnamon
  • 3/4 c. brown sugar
  • 1/2 c. butter
  • 1 (3 oz.) box butterscotch pudding (NOT INSTANT)

Directions:
Grease bundt pan. Pour in chopped nuts. Add frozen rolls. Pour DRY pudding over rolls. Melt butter (in microwave or in small sauce pan) & mix in sugar & cinnamon. Pour mixture over rolls. Let rise overnight.  Bake in the morning at 350 for 25-30 minutes.

Breakfast Casserole
Ingredients:
  • 8 eggs (beaten well)
  • 2 cups milk
  • 1 ½ tsp Dijon mustard
  • 8 slices bread (buttered & then cubed)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 ½ cup cheddar cheese (grated)
  • 2 cups bulk breakfast sausage or bacon (1 lb.)

Directions:
  1. Cook sausage (or bacon) until browned.
  2. Mix eggs with milk, mustard, s&p. Pour egg mixture over bread in a large bowl. Cover & refrigerate overnight.
  3. In the morning take a greased 9x13 pan…layer ½ of the bread/egg mixture, ½ of the cheese, all sausage (or bacon), other ½ of bread/egg mixture, other ½ of cheese.
  4. Bake 1 hour at 325 (OR until center is set up and not soupy). *Play around with different ingredients like onions, green chili's and/or peppers or salsa...you cannot do this wrong! 



Oatmeal Cookie Pancakes

Serves: about 12 cakes, 4 servings
Ingredients

1 cup old fashioned oats
1 cup all-purpose flour
1/2 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
2 ounces, 1/4 cup, chopped walnuts
3/4 cup sour cream
3/4 cup whole milk
2 large eggs
1 teaspoon vanilla extract
2 really ripe bananas, mashed up
3/4 cup raisins
1/2 stick butter, 1/4 cup, melted, plus additional for buttering skillet
Maple syrup or honey, for drizzling
Directions


Here's a great tip: if you cannot find really ripe bananas, just nuke them in the microwave for about 15 seconds and they will become super soft for mashing.


Mix dry ingredients, the first 7, in a bowl. In a another bowl, mix the wet ingredients, the next 4. Whisk the wet ingredients into the dry until just combined, then fold in the mashed up bananas and the raisins. Stir in the melted butter.


Heat a griddle over medium heat and brush with additional melted butter. Cook pancakes, each about 1/3 cup, until bubbles form on the top, then turn. Cakes will cook in about 2 minutes on each side. Keep pancakes tented with foil as they come off the griddle to keep them hot. Serve with drizzled honey or maple syrup over the top.


 

Flo's Baked Oatmeal
Ingredients:
3 c. rolled oats
1/2 c. melted coconut oil or butter
1/2 c. honey
1 tsp sea salt
1/2 tsp cinnamon
1 cup whey, buttermilk, yogurt, OR kefir w/ live and active cultures

3 eggs
1 tsp vanilla
1 tsp baking soda
1 tsp cream of tartar
optional: nuts or frozen berries

Directions:
At least 12 hrs before breakfast mix the oats, coconut oil, honey, salt, cinnamon and whey together and let sit in a warm place till you are ready to make it. (Soaking the oats allows enzymes and other organisms to break down and neutralize phytic acid thus improving their nutritional benefits.)

In the morning mix in: eggs, vanilla, baking soda, cream of tartar and optional nuts or frozen berries. Bake in a buttered 9x13 pan for about 25-30 min at 350ยบ. you may have to cook longer or with higher heat if using frozen fruit. Serve with butter, maple syrup, honey, cream, dried fruit, shredded coconut- whatever you like. Enjoy! (recipe from: http://flosfoibles.blogspot.com/)

OMG... thanks for the shout-out. I wish I could take all the credit for the Baked Oatmeal. I got it from someone else. ANYWAY... your version looks absolutely delightful!

flo...that time around i had mangoes and raspberries in the freezer...so that's what we used! yum! also, i usually have buttermilk so that is the only thing i've used. sooooo goooood!

cherish...i really want the recipes you made for Luke's birthday too! need to add those to my breakfast repertoire!
